Organic forest honey

The honey I used is BioSuisse certified and comes from Fricktal from beekeepers Thomas and Zivile Amsler. Their “forest honey” has a dark colour and a slightly runny consistency. Unlike honey which has been made from mostly one type of flower (like sunflower or acacia), the flavour of the forest honey is quite layered and slightly herbal. However as the different batches of honey are not mixed, the flavour, consistency and colour can vary depending on what flowers were in bloom at the time when the honey was collected. 

Sustainability report:

There is no question that local, organic honey is a sustainable ingredient! Additionally by buying honey directly from the beekeepers it is guaranteed to contain 100% honey (have you heard that this is not the case for all of the honey you can buy?). 

And of course the honey has not travelled far to get from the hives in Fricktal to me in Aarau, and even that was done mostly by public transport as I buy the honey in Frick, where I work in the Research Institute for Organic Agriculture FiBL, and brought it home with me by bus. So with this ingredient I can say with confidence: it is very sustainable!

Is it good for the skin? 

Honey has good antibacterial properties which is one of the things that make it such a healthy food, but it also contains antioxidants and is a good moisturiser for dry skin.
